Elderberry Thumbprint Cookies Gluten Free

I came up with this recipe when my family was sick at the holidays.  
I had some Elderberry Flower syrup and knew that Elderberry is great 
for getting over a cold.  It turned out to be a big hit.  This recipe can be 
used with any syrup like Maple syrup and the original recipe didn’t use the jam. 

½ Cup Butter, softened

½ Cup Sugar

2 Eggs

½ Cup Elderberry Syrup, maple syrup or other simple syrup

½ teaspoon Vanilla

¼ teaspoon Salt

1 Cup Coconut Flour

 

Jam, My choice is Damson Plum Jam or Elderberry Jam

Preheat oven to 375° F. Prepare a cookie sheet with parchment paper, Silpat or grease sheet.

 

  1. Cream together butter and sugar
  2. Add in Eggs, vanilla and syrup. 
  3. Add the Salt and Coconut flour.
  4. Let sit 5 minutes.
  5. Roll walnut sized balls and poke a thumbprint-sized hole in the center of the dough and 
    place on the prepared cookie sheet
  6. Fill the hole in the center of the dough with jam.
  7. Bake for 15-20 minutes.
