Elderberry Thumbprint Cookies Gluten Free
I came up with this recipe when my family was sick at the holidays.  I had some Elderberry Flower syrup and knew that Elderberry is great for getting over a cold.  It turned out to be a big hit.  This recipe can be used with any syrup like Maple syrup and the original recipe didnít use the jam. 

Ĺ Cup Butter, softened

Ĺ Cup Sugar

2 Eggs

Ĺ Cup Elderberry Syrup, maple syrup or other simple syrup

Ĺ teaspoon Vanilla

ľ teaspoon Salt

1 Cup Coconut Flour 

Jam, My choice is Damson Plum Jam or Elderberry Jam

Preheat oven to 375į F. Prepare a cookie sheet with parchment paper, Silpat or grease sheet.
  1. Cream together butter and sugar
  2. Add in Eggs, vanilla and syrup. 
  3. Add the Salt and Coconut flour.
  4. Let sit 5 minutes.
  5. Roll walnut sized balls and poke a thumbprint-sized hole in the center of the dough and place on the prepared cookie sheet
  6. Fill the hole in the center of the dough with jam.
Bake for 15-20 minutes.

A French Press is a very useful item.  It's main purpose
 is to brew coffee but it can also be used for tea or herbs

I love an electric kettle.  No itís not a hot pot.  You canít make soup in it.  It is for boiling water. Mine has a warmer on it and turns off if thereís no water in it.  Others have a bell that goes off and some automatically turn off when the water has boiled.  They are MUCH safer than a standard kettle and I wouldnít do without mine!  My college roommate gave me my first one and my mom wonít give it back.  (I have an awesome mom who deserves to keep the electric kettle)  I got a new one and use it when I go over to my mom's house.  Once you have one, you wonít go back.

I donít like tea balls or spoons.  They lose all the bits into the water and you end up eating leaves.  I use a tea mug basket strainer that fits deeply into an individual mug. It not only works well for all types of teas but also herbs.  


This is used for a pot of tea. The strainer goes over your teacup when pouring from a teapot.
