Pineapple Red Lentils

1 ˝ Tablespoons oil

1 Onion, diced

2 Celery Stalks, diced

3 Carrots, diced

˝ Teaspoon Salt

1 Teaspoon Ground Pepper

3 Cloves Garlic, minced

1 Cup Red Lentils (or French Lentils)

3 Cups Water

1 Can Crushed or Chunk Pineapple

  1. Heat oil in medium pot over moderate heat.
  2. Sauté onions with the pepper, about 10 minutes.
  3. Stir in garlic and lentils, cook for 2 minutes.
  4. Add water and bring to a boil.
  5. Reduce to a simmer; For Red Lentils cook for 10 minutes.  Cover and let cook 5 minutes more.  The red lentils start the color of the carrots and when cooked look like the pineapple. 
    For French Lentils cook covered for 45 minutes adding more water (or pineapple juice) if needed.
  6. Stir in the pineapple and Salt (salt its said to stop the lentils from softening so it’s best to add at the end.) adding more water (or pineapple juice) if needed and cook 5 minutes more.  Serve on top of rice.   
    Serves 4.
