Nikki's Cookies

Years ago I found this recipe on 101 Cookbooks from her friend named Nikki.  My family and friends loved it so much and I've adapted it for our needs and tastes.  A recipe to keep and a great way to use up old bananas.  

 

 I found someone who didn't like Bananas and I decided to try it with date paste instead.  It's great when  you don't have bananas in the house.

Gluten Free Nickki’s Cookies Date Paste Nikki's Cookies

3 Large Bananas
1 teaspoon Vanilla
¼ Cup coconut Oil or olive oil
2 Cups GF Oatmeal
2/3 Cup Buckwheat Flour or Almond meal
1/3 Cup Coconut, shredded
½ teaspoon Cinnamon
½ teaspoon salt
6-7 oz Chocolate Chips

1 ¼ Cup Date Paste
1 teaspoon Vanilla
¼ Cup Coconut Oil or Olive oil
2 Cups GF Oats
2/3 Cups Buckwheat Flour
1/3 Cups Coconut Shredded
½ teaspoon Cinnamon
½ teaspoon Sea Salt
6-7 oz (1 cup) Chocolate Chips

  1. Preheat the oven to 350°

  2. Mix all ingredients together.

  3. Drop the dough onto cookie sheet that is greased or covered in parchment paper. 

  4. Bake for 15 minutes.

Options:
1 Tablespoon Green Tea
1 Tablespoon Lemon Balm
2 Tablespoons Lavender

Blend herbs (one of choice or all) of choice in blender/bullet and mix into the batter.
