Buckwheat Dill Seed Gluten Free Yeast Bread
This recipe uses dill seed, not weed.  It has a caraway-like taste and my husband always thinks the bread tastes like a rye bread.

˝ C Warm Water
Pinch of Sugar
2 teaspoons Yeast 

3 Eggs, beaten
2 Tablespoons Molasses
1 ˝ Cups Milk
3 Tablespoons Butter, melted

 ˝ Cup Buckwheat Flour
1 ˝ Cups Brown Rice Flour
˝ Cup Tapioca Flour
˝ Cup Cornstarch
1 Tablespoon Dill Seed
1 Teaspoon Sea Salt
1 Tablespoon Guar Gum
1 Tablespoon Unflavored Gelatin

This recipe works best if all ingredients are room temperature. 
Grease one 9x5x3 bread loaf pan.

Combine all the dry ingredients into a bowl and mix.

In a separate bowl combine the warm water, the sugar and the yeast and set aside to allow the yeast to “bloom” or double in size.

Mix together the yeast mixture, eggs, molasses, milk and butter.

In stages add the dry ingredients to the wet ingredients until it forms a cake-like batter. 

Pour into the greased Loaf pan and put into a warm place to rise for 1 hour or more.  Check because the dough may spill over the side of the pan. 

Pre-heat the oven to 400 degrees F.   If desired you can score the top of the bread diagonally. 

Bake for 45 min. 

For storage keep these in the refrigerator or sliced and in the freezer.   To defrost cover in a wet paper towel and microwave 1 minute or toast the bread.

If the loaf is cut into 12 slices each slice is about 145 Calories.

 

Buckwheat contains several vitamins and minerals such as B1 and B2, iron, vitamin K, magnesium, phosphorus, copper and manganese.
It also contains a bioflavonoid called rutin, which strengthens fragile capillary walls.  Essentially what rutin does is strengthen capillaries as well as helps to fight off free radicals. Rutin encourages good circulation and helps to prevent varicose veins and similar problems. This means that it helps people suffering from high blood pressure, arteriosclerosis, restless leg syndrome and can even help prevent a very large amount of different types of cancer.  
Consuming buckwheat may also reduce gallstone formation, reduce colon inflammation and contribute to blood sugar control, and it also decreases cholesterol and lowers blood pressure.
